Stuffed Swiss Chicken Tutorial

Stuffed Swiss Chicken

Life Made Easy
This recipe was sent to me on Facebook. My family loved it. Of course I had to add my own touch. Ingredients in green are my little tweeks to suit my taste.

4 boneless, skinless chicken breasts or 8 chicken tenderloins
Salt and black pepper
4-6 slices baby Swiss cheese
1 can Campbell's Cream of Chicken soup
1/3 cup milk
1 stick butter, melted
1/2 cup Real Bacon Bits
1 bag of Pepperidge Farm seasoned stuffing mix (not cubes) or 1 small box Stovetop Chicken stuffing mix

Heat oven to 350 degrees. Spray 9 x 9 baking dish with cooking spray. Arrange chicken in pan and season to taste with seasoned salt and black pepper. Top each breast with a slice of cheese. Combine soup and milk in a small bowl and whisk until smooth. Pour soup over chicken to cover breasts entirely. Combine melted butter and Stovetop in a small bowl (moisten a little more with some warm water if it seems too dry) and scoop over top of chicken. Sprinkle Bacon Bits on top. Bake for 30-35 minutes. Tyler Perry's Tempation: LME Review

My husband and I went to see Tyler Perry's latest movie "Temptation". Now, I am trying my best to be careful as I write this review because even though I enjoy some of Tyler's work, my principles as a Christian are different from his so I wouldn't say this is a Christian movie. Still he' very talented and I can appreciate the message he sent in this movie.
Temptation presents an onscreen representation of the 80/20 rule regarding love and marriage. Movie characters Brice and Judith are childhood sweethearts who grow up to marry and move away to start life on their own. Six years into the marriage, Judith finds herself growing inpatient of her stagnant career as a marriage counselor. Judith also finds herself questioning the spice and strength in her own marriage once she meets business client Harley, who introduces her to a world she's never before experienced.
A very rich Harley seduces her with his promiscuous charm and promises to give her a life of luxury and fulfill her career goals. At first, Judith refuses Harley's advances but soon gives in after an unsuspecting Brice fails to give her the attention she desires. Judith and Harley embark on a whirlwind lust affair that ends with all parties paying a significant price of pain.

I was surprised when I read some of the reviews of online critics. Namely, Veronica Miller, writer for the Grio, who wrote she was annoyed with the "heavy-handed punishment of a female character who happened to be interested in sex, and the implication that the rest of her days on Earth were doomed to loneliness and regret. Oh. And HIV." I strongly disagree with Ms.  Miller. In fact, the CDC reports "African Americans have the most severe burden of HIV of all racial/ethnic groups in the United States. African Americans accounted for an estimated 44% of all new HIV infections among adults and adolescents (aged 13 years or older) in 2010.." In my opinion, this movie provided yet another eye opener for it's viewers.  Tyler kept it real and produced a movie that exposed one of the biggest problems that's affecting most marriages. Today's inpatient couples are splitting up at the first signs of boredom and adversity. They are quick to forget their vow to stay together "for better or for worse". Marriage takes work and has it's ups and downs. God ordained it to be forever....PERIOD!

B's Thumbs Up: I give this movie a thumbs up because it's relatable and it gives you a cold hard view into what can happen if you act selfishly and irresponsibly. Hollywood constantly sensationalizes lust and sin. They are blinding the public's ability to tell the difference between what's fake and real. I applaud Tyler for writing the truth in this regard. As my husband and I were leaving the theatre, we overheard to two women talking about the movie. One said to the other, "Thank you for bringing me to see this. I see where you were coming from. Tyler showed me that in this movie" The other woman replied "I told you. Think about it before you make your decision." I would like to think this movie helped someone make this decision not to give up on  her marriage but instead fight.

B's Thumbs Down: Tyler is very talented at his craft but I have to give him a thumbs down when it comes to applying biblical principles in this movie. He gives the audience a lukewarm interpretation of what Christianity is all about and we all know how God feels about a lukewarm Christian (Rev.3:16) Also, it was agitating to see Judith's mom who (in the movie) was also a reverend, curse at her son in law, Brice, and then justify her slip up after he tells her she shouldn't be cursing. For once...no lemme change that, From now on, I would like to see Tyler write characters with strong Christian values minus the cursing, misquoting of scripture and bar scene fellowships. We are to reverence the word of God and not make light of God's doctrine. I understand the desire to keep it real and relatable but it can be done without compromising the standard (Sherwood Pictures has proven that). If we are going to acknowledge God for his might, power and ability to change any circumstance then go all out!!! Jesus Christ died on the cross so that we can be free from sin.

Tyler, you say God has blessed you and has given you a platform to help the people so please start writing characters with true Godly standards and stop writing lukewarm christian characters who will only become a stumbling block for those (your viewers) who are seeking to know God.

How to Avoid Lady Hands

Before you continue reading STOP and look at your hands..

My heart dropping moment was when I noticed the old lady hands typing at my computer. I'm only in my 30's so why did my hands look like they were approaching retirement? The answer is plain and simple...NEGLECT. Our hands go through a lot during the day and are easily overlooked. Think about it. We work, cook, clean, style hair, give kiddie baths, bite our nails etc. The list goes on and on.

I recently discovered the True Blue hand scrub and lotion system while shopping at Bath and Body Works and let me tell ya.....I am in love!!!

First, I used the 60 second manicure hand scrub and followed up with the hand softening lotion. My hands now look youthful and feels silky smooth. I highly recommend this product. These items are currently on sale at Bath and Body Works; Buy Two, Get One Free.

Here are a few additional tips on how to Avoid "Old Lady" hands.
  • Remember to moisturize.
  • Use glove while cleaning or using harsh chemicals.
  • Whether at the salon or at home, give yourself a manicure. Keep those fingernails looking neat and healthy. Be sure to push those cuticles back, file, buff and apply nail polish or clear coat.
  • Apply Sunscreen when needed.
Now go and take care of those hands!!! (PS I am not getting paid to endorse these products.)

Extreme Couponing & Publix Deals

I don't consider myself to be an extreme couponer. Unless it's for church or charity, I don't see the need to coupon for 100 sticks of deodorant and 75 bottles of soda (besides that has to be murder on the kidneys). For me, it's all about cutting down on our grocery bill while building a reasonable stock pile based on my family's needs. Since we started couponing, our grocery bill has reduced by 60%. Couponing has also helped us to upgrade to purchasing name brand items for less the cost of generic. Extreme couponing is not for everyone but saving money is!

Please click on the link to watch my Basics to Couponing Tutorial.

It might just be me but I found this week's deals at Publix to be a little scarce. Listed below are some of the coupon deals I found.

How to Make Scratch Off Valentine's Day Cards

Okay, I know that I am barely getting in under the wire with this post since Valentine's Day is tomorrow but these cards are so easy to make it should be no problem; especially for those of you who are on a budget. I found this cute idea on Pinterest. Special thanks to my hubby who helped me paint with these cards. I am making these for the Marriage Conference at our church this weekend. Let Get Started.

Supplies Needed
Acrylic Paint
Dish Detergent
Paint Brush
White Crayon
Water Bottle Cap
Valentines Day Card (Click Here If You Would Like for Me to Email You My Template)

Print Your Card. Write in Valentine's Gift Options (I printed mine on card.)

Mix One Part Detergent with Two Parts Paint. A little really does go a long way. I used a water bottle cap to hold paint.

Color Over Hearts With White Crayon. (This protects writing from paint)

Paint Card. You will need to paint generously over the wording (dabbing the paint helps). Don't worry, it will dry flat. Card will need to dry for one hour before it's ready.

Voila! Go and Make Someone's Day Special!!!

How to Fold T-Shirts and Increase Your Drawer Space!!!

Special thanks to Alejandra of Home Organized for sharing her video  "How to Fold T-shirts" on youtube. Although, I didn't have the t-shirt folding tool she used, I was still able to fold my husband's t-shirts in the same manner! I was also able to combined two drawers of t-shirts into one leaving him with extra drawer space. As you can see, my husband's t-shirts are much neater and easier to choose from!!!

UPDATE: If you would like for me to do a video showing you my folding method without the tool, leave a comment and I''ll get on it!!!

Slap Yo Momma Stuffed Peppers

Disclaimer: I am not a dietitian and my recipes have not been certified by a nutritionist. My recipes are not totally carb-free. However, I am blessed to report we have begun to lose weight since we've reduced our carb intake. I'm not trying to diet as much as I am trying to change the way I eat. My hubby and I are low carbing it by removing a carb at each meal. For example, no toast at breakfast and no rice or potatos at dinner. Whenever we do eat them (carbs), they are low in portion amounts. Once again, along with exercise, this is working for us. It might not work for you. So you decide what's best.

I must say, these stuffed peppers are low in carbs and are slap yo momma good!

Ingredients
4 Bell Peppers (washed with tops and seeds removed)
1 lb Jimmy Dean Maple Sausage
1cup (divided into two equal parts) Shredded Cheese (we used velveeta queso blanco)
1/4 tsp Chili powder
1/4 cup Bacon Bits
1/4 cup Fried Onions (optional)
1/3 cup Sun dried tomato
Parsley

Preheat oven to 350 degrees.
On medium heat, crumble and cook sausage until done. In a separate bowl combine chili powder, 1/2 cup cheese, bacon bits, parsley and sun dried tomato. Mix well.
Spoon mixture in pepper halves.
Top with fried onions and remaining cheese.
Bake for 30 minutes and Serve!
My goal is to get my cheese a little more bubbly the next time I make these;)

Spinach & Asiago Sausage with Bello Grits

My husband decided to do something a little different with our grits one morning while cooking breakfast. It's become the only way we eat them now! His original recipe called for tomato instead of bell pepper but I wanted to do something a little different. I decided to call these "Bello" grits because of the bell pepper and onion topping:)

Ingredients
Spinach & Asiago Chicken Sausage
Grits
Onion (chopped)
Bell pepper (chopped)
Bouillon

Prepare sausage as directed on package. Prepare grits as directed.
Add olive oil to skillet on low to medium heat. Add bouillon, bell peppers and onion. Saute for approximately 6 to 10 minutes. While cooking the veggies, flip them with a wooden spoon often to evenly heat them until softened. Then top onto grits.

Beef Stew

I made this Beef Stew for Sunday dinner. I was surprised at the number of requests for the recipe after I posted a pic on Facebook. I found myself having a "uh-oh" moment because I didn't measure a single ingredient. This warm and tasty crock pot meal was made based on love and not measurements. So here is what I can do, I am posting the ingredients and cooking method I used. I suggest you measure the ingredients based on your tastes and amount of servings needed. The full effect of the flavor is in the gravy made from the stock.

Prep Time for this meal is about 30 minutes.
Ingredients
Beef Stew Meat
Red Potatoes (in medium sized cubes)
Carrots (chopped)
Large Onion
Chicken Bouillon Cubes (Yes I said Chicken)
Meat Tenderizer
Black Pepper
Worcestershire Sauce
Dale Seasoning Sauce
Flour

Turn crock pot on to low or high heat (Consider how long it will be before you serve dinner when deciding)Wash meat and add to crock pot filled with two thirds water. Although, some people choose not to, I prefer to change water before adding the other ingredients. I do this by boiling the stew meat for about thirty minutes to allow the fat to surface in the water. Then I carefully pour out the water and refill the crock pot three quarters full with hot water (again the water needed is based on your serving amount).

Add bouillon cubes, meat tenderizer, black pepper, potatoes, carrots and onion. Cook until meat and veggies are tender.

Pour stock from meat and veggies into a sauce pan on medium heat. Season to taste with Worcestershire and Dale seasoning sauce. In a separate bowl and with a fork, mix one cup water and 1/2 cup flour. Blend until consistency is smooth (you don't want flour clumps in your gravy). Slowly add flour mixture into sauce pan. Remember to continue to stir as you add flour mixture. Cook gravy on low heat until thickened. Slowly pour gravy back into crock pot and slow cook for additional five minutes. Your measurements for the ingredients may be more of less so experiment and let me know how it turns out. The response to this recipe has become a solid reminder me to always measure for the readers of my blog!

You can serve this on a bed of rice, with cornbread or as a hearty soup with crackers. See below for a coupon on one of the ingredients. Enjoy!!!

How to Make Cheesecake Cookies With Roasted Pecans!!!

I discovered this recipe on Pinterest and I received rave reviews from my family and church. These cookies are simple to make and have an addicting flavor that your loved ones will be sure to love. The first time I made them I accidently used self rising flour instead of the all purpose flour as listed in the recipe. This time I made them with all purpose flour. I realized that the cookies taste the same but puff differently while baking. I am posting pics of both options. You decided which one you like best. Now for the recipe...

Ingredients Needed
3/4 Cup Unsalted Butter
3 Oz Cream Cheese
2/3 Cup Sugar
1 Tsp Vanilla
2 Cups All Purpose or Self-Rising Flour
1/2 Cup Chopped Pecans (Roasted for about five minutes in oven)
Graham Cracker Crumbs

Preheat heat oven to 375 degrees.
In a large bowl, beat butter, cream cheese and sugar. Mix in Vanilla extract.
Stir in flour until well combined.

Add Pecans

Scoop dough and form one inch balls.

Roll in Graham Cracker Crumbs.

Bake for 12 to 15 minutes or until edges are golden and tops are slightly puffed.

                          Baked with Self Rising Flour
Baked with All Purpose Flour

ENJOY :)
If you decide to try this recipe, let me know how it turns out!
